    My universal lid made of 1.5" dense packing foam (not messy like styrofoam); for good measure I wrap the lid and pot (not the Anova) with several towels/flannels.

    True but not sure if a residential chamber sealer can accommodate that big hunk of meat (ham?). It appears a 10x15 bag (biggest my VP215 can handle) would be too small/tight. I use my old Foodsaver for oversized protein.
    There are times when old school food savers do the trick, but when it fits a chamber sealer is the bees knees.

    I tried but couldn't get the thinking outside the chamber trick to work, need to practise more for sure. However, in the case of big hunks of meat such as whole packer, shoulder or ham, the bottle neck with my chamber sealer is the 10" sealing width.
