    I’ll report back in a couple of days.  I am getting rid of **** flour inventory right now to practice; I am about to switch to good flour.  I am having decent results, but I cannot get a good windowpane so far.  I am not sure if it is because of the flour, my technique, or that my expectations were too high.  Results are on-par with the Kitchen Aid.

    According to videos I’ve watched, my adjustments were not correct.  There is definitely a learning curve.

    I plan on using the meat grinder tomorrow.

    Pizza dough was good but I do long cold ferments so getting to the windowpane stage is not important:

    There should be a post for gadgets that actually get used regularly.  Best purchase for me lately is a cheap plastic cheese rotary grinder. A couple pounds of three cheese blend takes a couple minutes and it cleans quickly with just a rinse. It's just a manual piece of crap that I would buy again if it broke
    Pine Apple core/slicer thing for me.  Use that all the time and would buy again in a heartbeat.

    Do you happen to have a tutorial for the “3 cheese” blend?  Sounds complicated.

    not so much a recipe, its in the method....the trick is to grind all three cheeses at the same time

    thats what i bought, the one with the suction mount. food processor takes too long for cleanup. bought it just for cheese but have since used it for cukes, celery, onion, carrots, and works well enough for a hand full of garlic, ginger root etc. so much nicer than the big bell grater. next one will have a larger slicer on it. a bargain at 20 bucks. tall bowl with a flared out side works better under the short chute
