It looks like deboned chicken ballottine was a theme for Canadian Thanksgiving!
Deboned 3 whole chickens procured from my trusty local butcher:
Add a layer of flattened sausage:
Add stuffing and chopped walnuts, I like Stove Top boxed stuffing, what can I say?
Wrapped with bacon and tie up:
I vacuum sealed two of the birds, and cooked one for Canadian thanksgiving:
Finished product:

Fantastic cook right there. I'm guessing that by the time you got to the third one you were practiced and quite tired of Jacques Pepin.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
