Two Briskets and a Bunch more

After several months away from Egging for a cross country move, I'm back up and at it.

We hosted a party at our house this weekend. I posted the menu earlier, thanks to those of you who helped fine tune things including Shiner Bock for the beer selection.

Here's the final menu, and some recipe links:

Appetizers 1PM

Fried Cheese Curds x 2

ABTs x24

Jalapeno and Cheese Curd Brats x12

Brisket Burnt Ends x1 brisket (approx 4 pounds)


Main Dish 3PM

Brisket x 24 pounds

Chicken thighs x4 pounds

Gumbo


Side Dish 3PM

Creamed corn

Southern Style Pinto Beans x2

Collard Greens

Honey Butter Corn bread x3


Dessert  5PM

Cupcakes

Peach Cobbler x2


The cooking took place over three days. Day 1 was prep, stock, packaging.

Day two was Brisket #1, sides.

Day three was Brisket #2 and more sides, and dessert.

    What an undertaking and brought it home.  Great groceries for all who enjoyed your efforts.  Nailed the entire deal.  Congrats.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    is that your go to recipe for fried cheese curds, or first time trying it? And how were they?

    I wouldn't say go to or first time. I have a rule about not cooking for guests what I haven't made at least once myself. In this case, my brother and I tagged team on it last week and then he did it again this week while I was more focused on the Egged dishes.

    The curds are very good.

    The key, I'm told, is in getting the freshest curds. I'm brand new here so take it for what it's worth.
