Carolina Classic Bologna Sandwich

Got your attention, didn’t I? 😆
I was enjoying a Carolina Classic hot dog the other day (mustard, onions, chili and slaw). The thought came to mind, “What about a smash dog?” Then I was like, “Bologna is basically a hot dog pancake.” Duh… 🙄

Was originally going to smoke a whole bologna and do the thick slices, but the store I was at didn’t have one… and so I just went with beef bologna slices seasoned with Dan O’s chipotle. Sorta rough sliced 4 pieces and fried them up in a skillet until they crisped up. Some buttered and toasted brioche to finish.
Kind of reminded me of pastrami as I was piling it on.
Plus the chili, slaw and onions.
It was good! I’d order it at a restaurant. 😋

I could get into that in a New York minute. One of my personal favourites (nod) is a tricked out fried bologna sandwich. That third photo is magazine quality coupled with the appropriate description. Nailed it!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Have never seen a bad way to serve bologna. One of the most versatile cuts of meat. This one sounds especially good. Very nice @Dyal_SC

I'm 64, and back when I was in gradeschool Mom would make fried baloney sandwiches every so often, and I hated them; I finally got her to leave my baloney cold, and just make me a sammich.
