Homemade chorizo recipes

I'd like to convince the local meat shop owner to make chorizo.
Anyone have a fav recipe to offer?

    Sadly no. My local butcher has incredible chorizo. I pack and freeze it to take up north to my dad. Pork, paprika, chili powder. Garlic, onion and salt is all I can provide as additions.

    You might check the "2 Guys and a Cooler" channel on EweTube, bet he has recipes for both versions (yeah, "he".... I've never seen who the other guy is).
    The two versions of chorizo I'm familiar with are Spanish/Portuguese (which is a fermented/cured meat, great for slicing) and Mexican (which is fresh, falls apart when cooked, and delicious as long as you don't read the Ingredient list).
