Pesto Steak with Burrata and Corn

I’ve made this a few times and posted here, but I don’t think I’ve linked to the recipe yet.  It’s easy and a crowd pleaser:

Dennis ( @dmchicago ) put me on to this recipe.  I have taken to adding some pulled pork to the mix, just to mix it up a bit:




This all sounds and looks like a bit of a mess, but it all somehow comes together and really works well.  The arugula pesto is damn good, and I only ever end up using about half of it.  That’s the only thing that survives in terms of leftovers.

For the corn, I’ve found it easier to cut the kernels off first and just grill them in the wok or on the Blackstone as I did above, but that’s a detail.

    Ok, I'll start and say what everyone is probably thinking.  That really needs either chicken wings or ribs on top and then it will be instagram or tik tok ready.
