Dino Ribs

Dino ribs went down at 9am today. I got these from Costco about 2 months ago and I’ve been waiting for a decent day of weather to smoke them. I’m going to run the egg about 275 for most of the cook and then plan to wrap in paper about 190 and bump up the temp to about 325 til they probe tender. I’ve got a pecan chunks down for the smoke. The large rack is seasoned with SPG and the second is seasoned with a coffee flavor rub. I’ll post a few pics along the way.

    This pic was earlier. I just wrapped the larger rack as it was up to 190 - 193 in spots. The bark look amazing. I wrapped in butcher paper with some beef tallow.

    Rolling out the big guns with the beef tallow.  That is enough to feed a small army.

    Last pics of this cook. I think the smoke ring was better on the larger rack. Delicious and a good amount left over

    Hi, I'm in Elmhurst, can you tell me what Costco you bought these from? I can never find them and I'm willing to drive...
