Dino Ribs

Dino ribs went down at 9am today. I got these from Costco about 2 months ago and I’ve been waiting for a decent day of weather to smoke them. I’m going to run the egg about 275 for most of the cook and then plan to wrap in paper about 190 and bump up the temp to about 325 til they probe tender. I’ve got a pecan chunks down for the smoke. The large rack is seasoned with SPG and the second is seasoned with a coffee flavor rub. I’ll post a few pics along the way.

About 2.5 hrs in. I rotated the rack a quarter turn, hit them with some spray of apple juice and bourbon. They probed about 160-170. I’ll get a better pick at the next check inXL BGE

This pic was earlier. I just wrapped the larger rack as it was up to 190 - 193 in spots. The bark look amazing. I wrapped in butcher paper with some beef tallow.XL BGE

The family was rioting and wanting to be fed so I cut the small rack after about a 45 min rest. This was the rack with the coffee rub and the bark was amazing. The fat rendered wonderfully and it was pure jiggle when I cut into it.
