Pork Butt cook time

Hi, I'm smoking a pork butt for the first time. My question has to do with cook time. It seems the general rule is about 1.5 hrs per pound at 250 for an internal temp of around 190. I have a 9 lb. butt. Can the cook time be reduced if I cut the butt in half and then cook both halves at the same time? I'll be using an Egg Genius controller.

    Yes - if you keep the two halves far enough apart to let the hot air get between them and cook them both on all sides.

    You can also cook at 275 and it will take about an hour per pound - or cook at 350 and it will take about 40 minutes per pound and be just as good (just don't use a rub with sugar over 300 degrees)

    the cook time will be reduced if you cut it in half but it wont be cooked in half the time. i tend to turn the heat up or down with timing the cook several hours before its done. say low and slow, turning the heat up after 6 or 7 hours turbo style to push it thru if i need to. i dont get concerned with low and slow temps being exact, 235 to 290 works for me making adjustments with temps way later in the cook for timing

    I have cooked this several times with awesome results.


    Texas Sugar Pork Butt (Meat Church)

    1.     Trim off any hanging fat

    2.     Score fat cap

    3.     Inject 1 Cup Apple Juice to 1/3 Cup Pork Injection

    4.     Slather olive oil on butt

    5.     Heavy coat of Texas Sugar and rest for 15-20 minutes

    6.     Preheat Traeger to 250 degrees

    7.     Cook fat side up for 6 hrs on bottom grill or until mid 170’s degrees, spritz with apple juice every 2hrs

    8.     Pull from grill and place in half pan, add more Texas Sugar and cover with HD foil

    9.     Cook for 2hrs or until probe tender or internal temp is 195-200 degrees

    10. Pull the pork and mix in with its own juices.

    Shoot for ready to eat time of 5PM or 10.5 hours total prep and cook/rest

    4:00 AM prep pork butt

    6:30 AM pre-heat Traeger to 250 degrees

    7:30 AM Put pork butt on grill, spritz @ 9:30 AM, 11:30 AM, 1:30 PM

    8:30 AM Put pork butt on grill, spritz @ 9:30 AM, 11:30 AM, 1:30 PM

    1:30 PM Pull @ 175 degrees internal

    1:45 PM Put back on grill

    3:45 PM Pull @ 195-200 degrees internal

    If required hold in Traeger @ 160 degrees or LG Playmate cooler.

    Plan on 1 hr per lb cook time @ 250 degrees
