Why not thighs, harder to over cook with a 2cook process.....fukahwee maineyou can lead a fish to water but you can not make him drink it

I cook them in the Egg as it’s getting up to pizza temperature. It works well. Best results I’ve had are sous vide to 150F then slice and put it on the pizza and cook.

As with @Stormbringer, I was going to suggest 150 in the sous vide. The chicken just stays so incredibly moist and gets so tender.
