Fried rice with leftover meats...

Morning All:

The much better half wanted fried rice this evening so who am I to argue...she cooked some rice this morning & then we looked through the fridge to see what we could add...there was some grilled shrimp from a few days ago, part of a grilled chicken breast & some andouille sausage so we thought that would work for the meat...here are all of ingredients "en place"...clockwise starting with the rice, then the shrimp & chicken, the andouille & a couple of eggs, bacon grease, onions, hoisin sauce, peas, cashews, carrots, soy sauce & sesame seeds (in the midde)...


Start by cooking the carrots & onions, then cook the eggs, next since the andouille hadn't been cooked before I browned that...that was all set aside while the rice was started...after adding some soy sauce & hoisin sauce, next the various meats went in followed by the peas & other items (carrots, onions, eggs)...topped off with cashews & sesame seeds...ready to come off the Egg...


It was very good with the andouille adding a bit of "spicy" flavor to everything...only issue is that we now have some made ahead "leftovers fried rice" (after we each had a large bowl full)...


Oh well, it will make a nice lunch later this week!
