Brisket, Pork Butt And Ribs Again

I have been at this BBQ/Smoking stuff for a while but I still enjoy spending 12 hours playing with fire.  It took me over 25 years to master briskets and I have finally reached consistency. Happy outcome!!

    I'm very impressed with the smoke ring you get on the brisket. What are your times and temps? And how much wood do you use?
  • @Mr1egg I usually run 250-275, after I wrap I usually ramp up close to 300 to finish.  This brisket was a 12 hour cook and I use 2-9” splits every 30-45 minutes.  As the coal bed burns down sometimes I supplement with a couple of smaller splits.  I have only had a stick burner for a year so I am still learning.  The Shirley runs itself, very easy to hold temps.

  • @lousubcap I know you have a Lang also.  I never could get the fire management with the Lang down, my temps were all over the place.  The Shirley runs itself rock solid temps.

    Had Shirley offered their turn-key cabinet (24-36) rig when I was looking for a small sticker burner (2016) I would have gone down that road.  
    They now offer the 24-36 with a Santa Maria accessory to use over the firebox.  Brilliant.  Thanks for the follow-up.

  • @lousubcap Getting a Shirley is really difficult.  3-6 month wait for a 24 x 36 standard unit.  The only option is the stainless shelf.  If you want any customization or a bigger cooker 30 month waitlist.  I got mine used without the wait but it cost $600 to get it delivered.  Lots of folks get the smaller units while on the waitlist for a larger or custom cooker.  There is a Shirley buy and sell Facebook page that gets some traffic if you are interested.
