OT - 2024 Chinese New Year

Gathered the clan to celebrate, my better half did all the work except for one dish.
Shrimp crackers
Chicken, seafood and tofu soup made with IP bone broth
Pepper shrimps with sprinkle of smoked sea salt
Vietnames spring rolls, dipping sauce made with Red Boat (not former forum favourite Five Crabs) elevated it
Vegetable medley
Ribs with shitake mushroom and dehydrated tofu skin, braised in home brewed glutinous rice wine
Steamed steelhead trout fillet
Asian wings
Pork belly cured in biltong box
steamed in rice cooker, quite decent for my first attempt
Black sesame rice balls, in ginger and sugar syrup

In a nutshell you make the shrimp dough, steam, chill, slice, dehydrate, fry. Quick Google search found this video that I'd probably follow if I ever get around to making it.

The ones used as garnish by restaurants are store bought plain, bland, ready-to-fry dehydrated variety.
Now the back story...
From what I was told, back in the day no one knew how to make it in Calcutta, until someone's kid went to college in SE Asia and learned from classmates. She returned home, taught her Mom and it spread in the small community. I remember my Mom making it...no fridge, no blender, no slicer, no dehydrator; she would omit the water and use extra shrimps to get the right dough consistency, the shrimp taste is unbelievable. Over the decades when we visit or have visitors we would get bags of dehydrated home made ones. We still have a big box of them, including many bags that my Mom made before she passed. There you have it!
