John, ole buddy, ole pal...way back when I was merely 7 years old in 1951 (we moved from IA to MO, so yes, Sir,  I know these year dates...) my parents had a chicken coop and raised a bunch of chickens for them and my A&U who lived next door. The "weird" thing I will NEVER forget was instead of my Dad chopping off the chicken's heads he would put his boot on their head and ...ah sh*t you know the rest...and of course the blood flying EVERYWHERE from the "flopping" headless chickens was yet another childhood memory...
  • My 70 year old buddy said growing up his mom would grab chickens by the head and spin their body to break their necks.

My grandmother would take a hoe and pretend like she was walking to the garden. As she passed the free range birds Whack!
  • My pappy would jus take his five iron out and it would be like here comes the hole in one.  You ain’t never seen nothin like a chicken head flyin a good thirty yards through the air.

My Grandma just had a hatchet and a tree stump; all I remember was the flopping body and the head slowly trying to cluck, but without its voice box; staring at me.
Traumatic to a 6-yr-old, but I guess it prepared

How long does it take to butcher the chicken?  From head flying to drumsticks frying?
I have 2 helpers, it’s about 3 hrs from start to bagged in the freezer.  We have a plucker and use the traffic cones.  Just a razor sharp knife and a slice at the jugular vein - quick and humane

Wish we're allowed to raise chickens where we live. I know you were looking at getting a chamber sealer big enough to pack your chickens, did you get one?
I still haven’t pulled the trigger on a chamber sealer. I’m concerned that a 6 lb bird might not fit.

Do you use the bags that shrink when you dip them in hot water?

  • The Amish that processed our chickens vacuum sealed the crap out of the whole ones and it look like they were stepped on.

  • I never thot about putting a live chicken in a vacume seeler but now I might have to try it.

No, I just used our foodsaver vac sealer. The reason I’m interested in a chamber sealer is because the birds are wet and can be a bit hard to get a good seal
