Broke my plate setter. What else can I do with a butt?

My table leaf just collapsed and left me with this. What can I do with a butt?

  • Just use the foil pan as a heat shield.  The bottom might overheat a little but a pork shoulder is awfully forgiving.

    You want/ not necessarily need (more to follow) a heat diffuser for the cook.  The diffuser (aka plate setter) just makes sure the hot fire is throttled down when reaching the protein.  So, roll the fire low&slow on an elevated grate is one way.  Foil protect the  bottom of the protein for a good duration of the cook helps out as well.
    Any way you can elevate something across the lump bed will get you there.  Aluminum pan etc.

    I would rub it and how patioinately you do that .. is totally up to you and how much privacy you have where the butt is.

    Take the butt and separate the big two muscles using your left and right hand while standing directly behind it. 

    If you see a hole in between the butt muscles, that's where the bone was, it's a great place to stick garlic or ginger or butter, if you use your middle finger you can get a lot of herbs deep where the bone used to be.

    How much larger is your butt than that big piece of plate setter?  It doesn't have to sit perfectly.  Just toss that big piece of ceramic on top of your coals and putt your butt above it.  A little extra aluminum foil / foil pan and you will be just fine.

    Do you have a pizza stone?  Toss it on top of your coals.  Again, there is no magic of having the legs, etc.  
    Set three pop/beer cans on top of your fire ring and set your cooking grid on top of them.  You will have a perfect setup!
