Corn Ribs

I’ve seen them on social media posts and SWMBO sent me a “recipe” to try a while ago (last year’s corn season) but I did not try it until yesterday.

They are pretty good!

-Cut 3-4 ears of fresh corn in half and then cut each half in 4 quarters (crosswise).
-Toss in vegetable oil, sprinkle with salt and pepper
-Bake at 450F for 10 minutes (kernel side facing down), turn and then bake 10 more minutes.
-Bake a bit more tossing them (5 minutes), you are looking for the kernels to be separated from each other.
-Make a compound butter, mix:
  1/2 cup salted butter (softened)
  1 tablespoon brown sugar
  1 tablespoon cider vinegar
  1 teaspoon paprika
   3/4 teaspoon garlic powder
-Dip or spread butter on the corn ribs

You basically eat them like ribs, discarding the core (some pictures made it look like the core gets eaten too).

    have done these and they were good. i did full racks though

    It is no effort really… I am even thinking they could also be done directly on the grill.

    It was a fun side dish.  The crispy charred kernels on the edges are a nice contrast to the tender kernels toward the middle sections.  The compound butter was really easy to make too!

    there are two corn rib threads, this one is newer.  

    Saw them at a local mexican restaurant this week. instant WTF reflex, but had to order the appetizer. Damn they were good.  Corn season is only a few weeks away, there will be fun had, and hopefully no fingers lost in the cutting. 

    The ones we had were with a not-too-spicy chipotle sauce which suited them perfectly. I am not a fan of the taste of chipotle, but these worked well for me.

    @zaphod Interesting timing, « somewhat » local (from within the province) corn season just started here.  We picked up our first dozen this afternoon.  I was debating between boiling and grilling but this will make a perfect side dish for chicken burgers tonight!

    I envy you as it's still only knee high out in the fields out here. Last year the raccoons got every cob from my small 8x16 patch so i relied on the road side stands and will again this year as I make sure the varmints have moved on.
