    Started with a 24 hour brine in filtered water, molasses, and pickling salt, then used a spicy dry rub in the fridge for 12 hours. 

    Added the peach preserves just before placing on the XL using peach wood to smoke with, at 225°F. Currently in a long stall. 

    Will update. The aroma of the cook, has brought in some curious folks, wanting to know from what it evolves.

    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Got thing for glazes and bark, the glaze keeps the moisture in, and the bark is delicious. It is sweet, salty spicy and Smokey. Picking the grill, with a glass of wine is a delicious experience our neighbors have come to love. Me too. Will post an image when it is done. Still cooking 19 Hours in, the peach wood is divine.lousubcap said:

    Thank you for checking out the post, and the very kind words. I think within us all is a component of charity. I know they helped Suzy with me to get through my health issues, I am alive and getting better, I could never repay them for everything they had done for us. 

    Plus I get to turn out a pork butt or two, as well. Thank you again.
