Canning

The tomatoes are about to start ripening up. I am wanting to start canning some of my salsa but am a little concern having never done this. I have researched online but I am not looking to change my recipe. Any one have any tips or advice?

    AH GEEEZZZ - Am I ever jealous!!! Our plants up here in central Illinois are merely even 24" tall and GREEN!!!

    What does your recipe look like?

    You need a recipe with added vinegar to safely can in boiling water.  Otherwise you need to can in a pressure canner.

    I’ve been given bushels of toy, I cook them down, Lyon a paste , strain skins, vac seal, no canning

    Agreed though commercial lemon juice will also work.

    you can sub out the lemon for bottled lime which might be better. you can also sub out the lemon for citric acid which will make it less runny. for canned tomatoes i just use lemon but i can cook it down later

    my san marzanos were about 5 inches tall last sunday, we were still getting frost near the end of may.

    now help me with Lyon a paste.....do you freeze the vacuum pack or just store it in the closet. i used to freeze it stacked flat on cardboard. now i just rinse out the jars and can them, seems the whole sterilization thing with the jars is just a waste of time and effort

    Freeze it stacked flat .....when I do "Jar" anything I never sterilize .....wash with a bleach solution or something like Star San
