I am still experimenting with stick burners as a natural evolution in the BBQ world. I still use my 2 Larges for grilling and cooking turkeys but I have moved to the Shirley reverse offset for my smoking. I did these ribs yesterday while working in the yard and not devoting much time to fire management and they came out incredible. I love my eggs but I have a whole new respect for stickburners now. I purposely overcooked the baby backs since SWMBO likes them fall off the bone. I prefer St Louis ribs, more meat and better texture. Looks like I have a KBQ that is running out of time.

As a as a side note I picked up several racks of beef ribs at Restaurant Depot on sale for $3.80lb. When I got home and broke down the package to vacuum seal there was a small sticker on the back indicating they were select grade. I grumbled about it to myself but decided I would use them to experiment with the stick burner. Well guess what since they are a fatty cut and braised to tenderness you can’t tell the difference.
