Thought I'd give home made bacon a try. The hardest part was waiting seven days for the pork belly to brine. Added jalapenos and cumin to the brine to give it a little extra zip. Not sure I'll ever look at Oscar Meyer the same again.

Cant beat homemade bacon and yours looks great!. I highly recommend drying for a a few days ,I go at least a week , after the cure before smoking....or don't smoke at all and dry a bit longer for PancettaVisalia, Ca @lkapigian
