Boating St Louis Style Ribs

I tried boating a brisket last weekend for the first time and was very pleased with the results. Decided to see how it would do in a rib cook. 
I got 2 St Louis style slabs using rockwood charcoal plus rockwood sugar maple and peach for smoke. Going to boat them after about 3hrs with apple for the braising liquid and mist the top with apple juice about every hour 

I’ll post some pics of the brisket I did last weekend too!

    That brisket turned out!

    And, I don't know if I'ver seen a kid look any happier about ribs going on :) He's got his priorities right, early in life.

    After 3hrs got a real nice color. Wrapped some foil boats poured in apple juice and drizzled honey on top

    Those look great in my book and you scored quite ring in the process.  Congrats.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Sounds like you guys should trade. One likes a heavier bark the other a medium bark. 😜

    Both where excellent looking ribs IMO.
