Thinking of making this tomorrow but haven't ever made it before. I heard that you can get the grease off using paper towels. Was wondering if this was a good recipe?

Have not tried that recipe, but ‘over the top’ is the only way I make chili. I don’t fuss much on the meat just hamburger with salt and pepper, and let the oak smoke take care of the rest.https://eggheadforum.com/discussion/1218950/chili-and-pizza

I will. The only thing is, the recipe says to use their cast iron dutch oven, which is 5.5qts. I don't know if mine is that big.

This is why I’m not welcomed in Texas Also a must in my chili is a can of water chestnuts, it adds a wonderful texture and crunch.
Use the pot you have and have a go at it. Just remember to leave space to add the meat afterwards, speaking from experience on that.Dave

question about wine....this recipe calls for beef broth but @Stormbringer
calls for wine. Never made chili with wine, how will that affect flavor? -

I'm mixing both sort of and see what happens.
I'm now at the "come on egg...heat up" stage. This is my weakness...waiting and trying to get it up to temp. Just 275 is all I'm asking! -

OTT is the only way I make chili.
Large Egg with adjustable rig, Kick Ash Basket, Minimax and various Weber's.

and it's done. I put it up because my wife already had dinner planned. Besides, a day of rest and it'll taste even better.
Here's a pic pre-meat
I used 90/10 lean meat. It didn't really crumble. -
1st thing my wife asked after eating some was if I added the chili seasoning....I knew I forgot something.
She didn't care for it, said it tasted too much tomatoes. I don't mind it, but yeah, it's basically thick beef stew that has a bunch of tomatoes.
Might try it again with different recipe in a month or two -

Take it and make it your own.

For the meat, I just take it from the package and I do not compress or shape it, so it's still loose raw, then when cooked, I shave 'against the grain'. I also add chili sauce, either home made or store bought.
The one I make is tomato based, which both myself and wife like. It freezes well also so we are usually good for a few months.Dave
