Planning ahead (dry aging)...

Morning All:

I stopped at Publix yesterday to pick up a couple of Ribeye steaks for Christmas dinner for me & my much better half...while I was there the butcher brought out a couple of roasts for someone else to pick from...the other guy took the smaller one but I took the larger one as I figured it would be perfect for Valentine's Day (about 50 days from now)...here is the label...


I would have preferred that the bones weren't cut off, but I can live with that...now into the container in the refrigerator to rest until just before Valentine's Day...


End view...I'll probably cut into steaks (maybe 5 or 6)...


Oh yeah, the bones are pretty decent, so I vac-sealed them for a nice meal sometime in the future...


I'll gladly take a $103+ savings!


I'll update over the next 50 days.

    Looks, like a great score and 50 day effort! But, Jay,…from those pictures I’m a bit confused, I sure hope that roast is sitting on a rack, Air circulation is critical for dry aging,

  • Hi Jay. I went to Publix to buy the $5.99 rib roast they advertised, and they didnt have any...the butcher said the bad weather up north delayed the shipment, so I had to spring for the Greenwise $12.49 a lb. one. No savings there, but at least it was better than the prime they were selling for $21.49 a lb. that didn't look any better than the Greenwise one.
    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

    That's a helluva score!

    This may be splitting hairs, but circulation around the roast will likely be better if placed in a tray or sheet pan.

  • Looks like you got a great deal there. I’ll be watching for updates.
    Have talked to the meat cutter at our local Publix about getting a rib roast without the bones cut away. He told me they always cut the bones away from both beef and pork rib roasts, but to check back with him to try to catch one before they cut .
