Duck on the egg

Anyone here cook duck on the egg? My son loves to duck hunt and brings home filets. Looking for some good variations to cooking it. First attempt will be this:
-Start with a boneless breast and pound it out a bit
-then dice up some jalapenos and mix with cream cheese
-put a dal-op of the mixture in the breast and fold over
-then wrap in some bacon
-put on the grill at about 400-450 and cook till the bacon is cooked
-It has always made a perfect med to med-rare and cooks it to perfection.

Sort of depends on the type of duck, dabbler vs diver. I use to just breast them out, soak in salt water for a few hrs. Marinate in olive oil and soy sauce, wrap in bacon, and grill like a filet. Better than a steak in IMOLGBE-1999, MBGE-2003, SBGE-2007

I love duck. My only recommendation is to not get it too done and cook it slow enough to render the fat.

I haven't done much with duck on the egg since it cooks fast (if using the breasts). I have made the over the top chili with duck but I also added in ground beef and sausage for the fat, that chili is always good. I have also gotten to where I will make 3 smaller meatballs to speed up the cook time.Some other dishes that are hits:Duck egg-rollsDuck fajitas (probably our favorite)Duck a l'orange (camp style)Duck poppersAll with wood ducks or mallard. If you shoot a goose try goose pastrami it is really good.LBGE

so I cooked them the other day. Honestly, they were ok, but not sure if I would make them again. Not sure if they are overcooked?

wrapped up, ready to go. I put 2 strips of bacon on them...maybe that was the problem?
Finished product. They looked really good
cut one open. there is cream cheese in there with jalapeños.
I mean, I ate one. It just had (to me) the consistency of liver, which I am not a huge fan of.

if duck gets a degree over medium rare it is over-cooked. if you are gonna wrap in bacon it needs to be super thin so the duck isn't over done.
Have your son pluck the breasts and then filet them out with the skin on and then cook to med rare.
I've got an amazing duck bacon recipe I'll track down and post. outstanding eats.
I make lot of duck and goose barbacoa as well. -
