Missed cooking a pastrami this weekend, no what

This is the second year in a row I missed the timeline to cook a home made corned beef. This past Sunday was 7 days in the cure (Ruhlman recipe). I have 6 more days to go now until I get another chance. Last time I just sous vided it and left it until I was ready. I'm hoping not to do that this time. I pulled it out of the brine, rinsed and put it back in a container in the fridge. Good enough until this Saturday? Or should I do something else?

Personally I think it’s fine , if anything I’d let it air dry for the 6 days rather that keeping it in a containerVisalia, Ca @lkapigian

its preserved, put it in a barrel below deck on your boat and cook it when you want to. you are fine to cook it next week
