Two Racks Of Beef Chuck Short Ribs

- Here are the final two racks of the 4 pack I bought at Restaurant Depot.  Did on one of my LBGE's, Rockwood Lump and Post Oak for smoke, cooked them at 250 degrees until toothpick tender. 
- Definitely not as nice and most likely not as tasty as ones recently posted by @SSN686 @bbracey21 and 
@Jackster21 recent cooks.  Would have been hard pressed to turn any of their ribs down.  They looked downright amazing!
- Have a Brisket that is sitting in the fridge that will get done Saturday night going into Sunday morning.

    I would crush any of those.  Brisket on a stick and you delivered.  Congrats.
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Those look good!

    I stopped at the local meat market.  Guy has ZERO BBQ game.  He has beef ribs all the time, but he saws them into individual ribs because "you can't fit a rack of beef ribs in an instant pot!"

    Anyway, I asked if they had any that weren't yet cut apart.  Scored a vacuum pack of 2 racks.  They look good.  I froze one rack and will cook the other rack tomorrow.

    Instant Pot.  Geesh!

    - Pretty sure, NO I am positive that Beef Ribs  would be wave off concerning the instant pot with me at the stick. As the old Pace commercial used to say "Get a Rope".
    - Hope you have a great rib cook tomorrow and all goes well.

    They cook fine as individual ribs, if you’re in that situation again.

    I’ve gotten them at HyVee. They cut them up as well but I just asked the butcher and he goes back and gets the cryovac packages as they receive them. Two slabs per pack. They’ve always been really good too. I did some Allen Brothers last time but they weren’t appreciably better IMO.

    I’ve smoked the individuals before. They do fine. I much prefer the whole rack but the individuals do ok in a pinch.

    Yes.
    - Was actually born at Clark AB in the PI. Both parents were chAir Force.
    - I got what I considered a free upgrade and went to the school for wayward boys (at least at the time) on the Severn River.
    - The "6baluts" came about because I have/had 6 BGE's (actually gave one away, but replaced it with a Primo Oval XL).
    - Someone before asked if I have eaten balut. Yes multiple times taken advantage unsuspecting sister squadron mates who bet beers on what they thought would be my inability to eat balut. Needless to say I and my squadron mates bought very few beers in Subic/Baguio thanks to generosity of the unsuspecting.

    @6baluts - I am the guilty poster inquiring of your balut prowess. That was a few years ago.  I figured no one would come up with that forum handle unless they were well acquainted with the egg.  
    Toss in Subic here and it becomes perfectly clear.  I'm sure you logged a few hours at the Cubi Point club.  Those were the days and I wasn't even a jet jockey.

    - Multiple missions over the SRB many successful in search of cold San Miguel, Red Horse or Mojo.
    - First spot I always stopped was right over the SRB called Paulines which I am sure you either passed by or made your way into.
    - Believe it or not that first right out the gate their was a restaurant down their called Nina Papagayo's had some great Filipino and Guamanian food. Best thing about the place besides the great food was the non hussle low keyed atmosphere.
    - Cubi O Club for the shenanigans, Subic O Club for the food and the Chuck Wagon (JO jungle) for the best time club wise in my opinion.
