Not familiar with it either.  Using it on things you put maple syrup on might be a place to start.  And ask the neighbor what she uses it on.

    Never heard of it.
If tasting it doesn't suggest anything, I'd smear it all over a bunch of raw zucchini, put them in a bag, and leave it on her doorstep during the dead of night.

As a fellow citizen from central IL then I bet the pumpkin material originally came from Morton! The word “butter” threw me!

Use it like apple butter - slather on a waffle then top with vanilla ice cream and another waffle.  Doesn’t everyone do this?
    Love you bro!
  • stuffed chicken thighs  with diced mushroom, diced onion,a binder(corn meal)bacon bits, pumpkin butter. 1/2 of the batch can be done with apple butter and leave finding out which is which to chance.  Big fall time hit!

Is there any large jar of stuff she might or might not like?  If you put your jar on a shelf and never speak of it again, and give her a large jar of stuff, maybe she will stop giving you a large jar of stuff.  Otherwise, whatever you do with it this year, you will be forced to do every year if she suspects you enjoyed the large jar of stuff she gave you.

That is, to me, the worst part about neighbors.  They give you a large jar of stuff as a seemingly innocent gift.  If you tell them how wonderful it was, they will always get you the same large jar of stuff.  To combat that, I attempt to give them a worse large jar of stuff, that they are not likely to enjoy.  The winner is the neighbor who breaks the large jar of stuff reciprocity.

After more thought, since she gave you pumpkin butter, had you given her something recently, and this is her attempt to break the large jar of stuff reciprocity?

No - we are great friends - she knows I do all the cooking and baking here so this was a gift out of kindness which she purchased for us at a popular large orchard nearby.

I have not had apple butter for some time.  My mother loved it and bought it frequently.  My favorite way to eat it was to spread it on buttered toast. Then fold the the toast in half and dunk it in milk and eat it.  A little weird but I did that a lot.
