That’s interesting. I might have to cook the sausage some first to render and get it cooked more as to not over cook the shrimp.
Kinda like the Pig Shots, I cook 1 flat side of the sausage piece first before I wrap with bacon, stuff with cheese mixture and fully cook. Even better to par cook the bacon.
    Thank you,

Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

I do my pig shots with kielbasa.  It's already cooked so you're just looking to get the bacon right.

It's been years ago but I would make something similar and called it pigs on a beach.  Take a piece of sausage put a shrimp on top and wrap with bacon.  Add your favorite bbq rub on top and sauce if you want.

Yes, it’s cooked but I really like the extra char, caramelization and flavor from pre cooking the inside side of the cut sausage on the pig shots. Just 1 extra step.

Looks good but shrimp doesn't take long at all to cook so I'm guessing that's fully cooked sausage?

That makes perfect sense, Darian, thank you.
