Early Beef Ribs, Because @paqman

Had a rack of prime plates dry aging in the fridge, scheduled for cooking on Sunday.  After seeing the post from @paqman on Tuesday we couldn't wait that long, they got cooked yesterday.  Rubbed with about 75% SPG and 25% Dizzy Pig Red Eye Express.  Took about 5.5 hours at 250F, used sugar maple wood chunks.  Served with green beans sauteed in butter/garlic and a basic salad (not shown)...

Occasionally the bones all move the same direction, most times one will be opposite all the others.  This time had one that was undecided...
