First Picanha

Came a cross Picanha at schnucks, this one was discounted to $17. Little over 3lbs.

Cooked it like I do tri-tip. Little bit of Holy Cow and a short rest then onto egg indirect @ 250. Cooked to 125 IT and seared (on Webber Gas). I thought this was great, fat cap was best part.

Question
-will leaving the fat cap on a tri tip turn out similar to this picanha?

    That looks killer

If it has it, I leave the fat cap on my tri tip , take it till it renders and bark is set, excellent every time

That looks incredible!!  Wish I could help on the fat cap with a trip tip but I've never gotten one with a fat cap on it before.

@Squatchcakes - Way to hit a home-run right there.  Great bark and the $$ shot for the win.  Congrats.
Welcome aboard and enjoy the journey.  Above all, have fun.

I've never had a tri-tip with a fat cap.  I would leave it on if I did though.  Worst case you trim it off as you eat it. Assuming it's the good fat and not the solid stuff that doesn't cook down at all.

Stumbled across these at my local Fareway.  I may go back and pick up a few more for the freezer!  Never saw them before.

    Lookin' good @Langner91.

I really miss Fareway. Only store where the conversation went like this...

Me: I need some beef for a Korean recipe. It's called...

Pimply 15yo at the meat counter: bulgogi? Or kalbi? The bulgogi is over there, but I can cut some kalbi for you.

I bought these at a Fareway grocery store, but there is a Fareway Meat Market (only meat, cheese and booze) in Ames, Iowa.  As a Hawkeye, that is the only reason to visit Ames.  The kids there are exactly as you describe.  The last Tri-tip I bought there came with the question "what type of grill do you have?"  I told him an Egg.  He then asked if I cooked them direct, indirect, or reverse sear.  The kid was probably 18 or 19.  I was very impressed!

Fareway should open those in more places.

Nice looking finish on the exterior, perfect inside.

I've tried picanha a couple times and seems just ok. Reminds somewhat of a thick sirloin cut, lot's of beefy flavor but a bit of chew to get down. I wonder how they would be sliced super thin for philly cheese steaks sammies.
