    Without watching the video, why would you want to butterfly a Tomahawk or any other steak for that matter, unless you're stuffing/rolling it for a recipe?

    The guy started with a very thick steak - probably between 3 and 4 inches thick.  I'm not sure there's any big upside to doing this aside from presentation.  It probably cooks faster that way too, but... that's not a driver for most of us here.

    It's not actually butterflied, he took a 2 bone tomahawk steak, and basically butterflied into 2 one bone steaks, keeping one edge connected. He didn't even stuff and fold back over, he just grilled it butterflied open.
