Bread baking - which size egg

I'm looking at a second egg to go with my large. Thinking of a small as I have had one in the distant past for camping. But since then I've developed an interest in baking bread. Anyone do much baking and if so which egg size would you buy?

not much of a bread baker but have made a few. with my large its one at a time for boules and i think with the heat flow in an xl, it would be the same. since you have a large, all your accessories will fit in a second large

Thanks for the recommendation, but I'm undoubtedly in a minority amongst eggers. You see my medium is STRICTLY for baking and it has never had any meat in it - not even pizzas, nor even any smoking wood! Just cakes and cookies and some occasional bread. As a result in spite of it now being 21 years old the dome and even the p/s is still a light tan color - not even honey colored! My guess is protein is the culprit assisted by creosote which blackens domes.

You want to be able to fit a 4 QT dutch oven inside of it.  That will work on a Large no problem.

I was thinking along the same lines wrt a dedicated egg for baking. Medium sounds like a good size too. A dedicated large would be nice but maybe a bit too spendy. Thanks all!
  • In line with what @johnincarolina is suggesting above, when thinking about baking, I like to think about the biggest sized vessel I intend on using. Baking trays? Dutch ovens? Pie plates? Think of the biggest vessel you anticipate using and buy accordingly.

Good points all. I have also scoured this forum for hits of everything related to "Large vs Small", "Small vs Medium", etc. So many factors. Thought it would be a tough sell, but when I mentioned my intent to my wife, she suggested another Large. Done. How can I go wrong!

I wish @badinfluence was alive to give his opinion.  I think he had one of each size for baking and multiples for cooking meat.  I nearly bought a medium from him that had never seen protein.

My advice is always to buy the biggest egg you can afford.  Get an XL and burn your L out for baking.  Small eggs are cool, but your biggest egg is what limits your biggest cooks.
