A little disappointed with the last one, but this one rocks. Weber coffee rub. Five hours on the egg at 280 followed by 90 minutes in butcher paper at 300. Another 90 minutes in a cooler. Glazed with a little sauce and it’s resting in the oven waiting for the green beans to get done. A sample suggests yummy.

    We sliced and feasted. Chuck, slaw, and beans. No pics of the feast :/ . Super tasty. Not sure a brisket makes sense any more with just the two of us. I like a whole packer as much (more?) as the next guy, but the scale of this chuck just made sense, and it was crazy good. The next time I see these 4" thick chucks at Costco I'm going to grab a couple more.
