Meatloaf and Brisket

Picked up this meatloaf today from RC Ranch store in Houston.
Tossing on grill shortly.
Then the brisket later tonight.

    The great Texas tease.  But wagyu in a meatloaf.  Recalibration is needed.  Enjoy the groceries.  Better to be lucky than good.

    That's what I was thinking, but looking thru the cryovac, I think that's the wagyu breed, not the actual A5 intermuscular fat stuff.

    Where is RC Ranch Butcher Shop? Their website mentions a farmer's market location.

    There is a massive Farmers Market in the same structure. Well worth the drive to see it.

    Based on the pics of that wagyu-bring a few CC's so when you max out one-you have a spare.  Sweet looking cut right there.

    They have a dry aging room as well but it wasn’t very full.

    Both resting now. Pulled a little early because of power outage. Headed to get adult beverages in the A/C. 
    Will make burnt ends with the upper  piece.

    Good question.
    I was getting close to my probe like butter but the other people in the house wanted to go somewhere with electricity to watch the ball game and A/C. So I pulled the meat and wrapped it. Off to the bar we went

    No issues here.   Road trip to a bar is a worthy diversion.  
    Now- after the bar, how was the end game??  The answer can certainly be deferred til after the bar the enjoyment is savored.  B)

    You get to enjoy those benefits when you live in Texas.  My brother from Crowley always made the best BBQ and cost was very low where he shopped. 

    Compared to the costs of most things, we are lucky with beef most of the time.
