Easter Dinner for three on a Budget

Just three of us this year; Teefus, Bride of Teefus, and an old friend. What to do? Check freezer and discover spiral sliced ham from a workplace giveaway at Christmas. Hmm? Throw out sugar glaze package. Place in a foil pan bone side down and slow roast on the Egg with some Applewood chunks. Cover up with foil after a couple hours in the smoke to to steam in the copious amount of liquid oozing out. Pull after 3 hours at 275*-300* and let rest for 30 minutes. Melt in your mouth tender. Serve with fresh steamed asparagus and cheesy Chester Potatoes from the Deli. Low effort and high satisfaction. Plenty of leftovers to share.

As a bonus, after we stripped all the meat we simmered the bones for 4 hours along with the juices that had escaped while roasting on the Egg. I have a couple quarts of a delicious smoky ham bone broth for soup. Now to decide, split pea or lentil....?
