Hybrid Tri Tip

Cooked my first Hybrid Tri Tip today. Seasoned with Heffer Dust.
Smoked on the 590 starting at super smoke for 15 minutes and raised to 250. Pulled at 115 internal the seared on the BGE which was preheated at 550.

Served with Chimichurri Sauce.

One of the best Tri Tips I have cooked this year
