Cooked a small brisket today…seasoned with DizzyPig SPG.  Ran the XL at 225 for the first 6hrs…because I wasn’t thinking…was going for 250 but like a dummy closed the vents down and let it settle in at 225.  

Used Rockwood charcoal and oak for smoke.
