Cooked a small brisket today…seasoned with DizzyPig SPG. Ran the XL at 225 for the first 6hrs…because I wasn’t thinking…was going for 250 but like a dummy closed the vents down and let it settle in at 225.
Used Rockwood charcoal and oak for smoke.

Don't know what you did differently other than the cook temp but you nailed that ring And bark as well.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
