Awhile back while visiting the local meat shop, I saw this 1# tube of Chorizo and it had to come with me because the only
time I've seen it is the stuff WM sells. Figured this would be way better.
Now looking for ideas of what would be some good options.

Breakfast....
Start roasting cubed potatoes in cast iron skillet over low- medium heat. Add onions and peppers later as they cook faster. Add chorizo. In another pan make over easy eggs. In potato pan grab handfuls of spinach to wilt. It reduces quickly. Get the spinach sloppy serve in a bowl with one or two eggs on top. Add hot sauce or aioli. Can put in tortilla as well.
Chorizo, bacon, sausage are my favorite breakfast meats. In that order. Can't keep them in stock in the freezer!Large, Medium, MiniMax, 36" Blackstone

+1 for queso. Tacos would be a close 2nd. Little Mexican joint down the street does some tacos with fajita steak, bacon, chorizo and cilantro. It is so good!

Definitely an authentic taco night with chicken, beef and chorizo and all the fixings
