Grew up in Baltimore area and have enjoyed pit beef my whole life, finally got around to making one myself. Pit Beef sandwiches with Tiger sauce and mashed potatoes. (There's some grilled yellow squash on the other side of the plate, but who cares about veggies?) Mmmmmmm.

Great effort and glad you enjoyed it. If you are a former Baltimore resident I'm sure you know Chaps is the gold standard. I'll link to their recipe below. 400-500 degrees and sliced paper thin. It should melt in your mouth. Tiger sauce is just mayonnaise and horseradish mixed together. Add some thin slice onions and you are in heaven!

Friend is having a moving party today. It has ballooned to a huge fest. He was in a fix so I offered to cook some beef to go with his pulled pork. Giving this a try today with 40 hungry critics waiting. I did, in fact, add old bay to the sauce. Later.
