Though I am not Catholic and never have been my beloved wife of 55 years is and with me being the sole cook here I try to fix kick butt meals on Fridays during Lent. The following recipe is one WE love and I will be fixing it Friday night.

Shrimp, Mushrooms & Hollandaise Sauce

~ a tasty meal even when not during Lent! ~

This is a simple but extremely delicious Lenten meal. It could even be served to company!

Needed:

1 pound of thawed cooked and cleaned medium size shrimp (51 to 60 count)


½ pound of sliced white button mushrooms


1 cup of cooked white rice, wild rice or even exotic Black Forbidden Rice


½ cup grated raw sweet onion (grated is a pita, so VERY finely chopped onion is OK)


1 package Knorr Hollandaise sauce mix


1 cup milk (if 1% use 2/3 cup + 1/3 cup of H & H)


¼ cup butter


If the mushrooms are thick, slice in half to make them thinner. Sauté mushrooms in margarine and EVOO until cooked. Add the shrimp cover skillet and turn off heat.


Cook rice.


Prepare Hollandaise sauce according to package instructions. After sauce is thoroughly mixed and melted add in the raw grated onion and again mix well so as to cook the onions, though not much time is needed to do that!

     

Spread bed of rice on plates, add shrimp and mushroom mixture and cover with the Hollandaise sauce. Top with Parmesan & Romano Seasoning (optional).

    Oooops -I should have added that this recipe makes a huge meal for even 2 hearty, hungry people so you might want to cut it in half!

    I think salmon on a plank is worth a spot in the rotation. Someone on here said to mix Dijon mustard and maple syrup to glaze the salmon with. I assume a one to one ratio.

    Trust me…salmon recipes are always in my Lenten rotation! 

    Also what some might call “exotic” I always include a Lenten meal of frog legs. Though those leg prices are also just plain stupid! I hope the poor donor frogs know their legs “jumped” sky high due to inflation!

    We eat meatless for Lent at least half the time, doesn’t have to be seafood.

    I’ve gotta be honest - I never thought of frogs legs as not meat!

    the big supermarket chain here is greek, there will be a pile of spanakoptia in the pizza ovens today. if you havent tried it, heres a good recipe. its usually cooked more like a casserole but it can be done as a turnover or pin wheel in design. the shrimp sounds good

    Will do, Sir! Though the plates will look smothered almost like Cajun Etouffee.

    Yep.  We have a greek deli here that serves spanakopita.  I used to get a turnover for lunch all the time.  If made well it is legit delicious!

    As promised here is a picture of my meal. BTW in case you can see some of the dark grainy parts those are globs of the wild rice from a company up in MN. Wild rice is something special!


    and then here is something you never see pictured on this forum nor others - the container of the leftover which I said there would be from this meal..at least for the 2 of us!

    As a MN guy and my wife Wisc a good fish fry of walleye or perch can't go wrong. That's a year round thing, not just lent.

    I choose cod. With a good beer batter slathered on her, she pretties right up!  ;)
