    Thanks.  I asked for indirect thought process.  I have a wood burning pizza oven that is stainless steel construction so retaining heat is not there.  I've found using a slight elevated log holder that embers can fall Thru works however doesn't heat the brick floor well.  It was taking me about five logs to build up enuff ember falls to heat properly to cook.   Almost exactly what you said.  Amazingly fun either way.
