Stuffed Pork Loin Experiment

So last weekend tried deboned stuffed wings, today stuffed a pork loin with cream cheese, smoked provolone, spinach, dried cherries and pecans. Cooking on the egg tonight when I get home from work. Another first for me, trying to expand my cooking abilities.

Well the results were very good but I would do it differently next time. I browned it on the egg in a cast iron skillet raised direct then moved it onto the grate to finish. Pulled at 138, center was incredible but the outside was a little overcooked. Next time I would brown in the skillet but finish indirect. Still good eats.Southeast Louisiana
