mac and cheese: roux verse modernist cuisine

pretty much biased the comparison using my favored gorganzolaroux recipe verse sodium citrate/cheddar/pepperjack/manchego.

nutmeg nannys gorganzola



modernist cuisine





the sodium citrate made a much smoothe sauce but there was more depth with the roux. it could be that i didnt like the pepperjack in the mac though

    Looks good from here. Nice side by side comparison.

    I can see how the roux version had more depth of flavor. Pepperjack cheese has always tasted like plastic to me. That, and mild cheddar, are like the Miller Lite of the cheese world.

    i use this with a little more roux and milk and 3 times as much cheddar, cabots seriously sharp. go really light with the fresh grated nutmeg. use real elbows, i dont know where i got those twisty things

    Moving pictures was always cool too.  Nice white square behind them always stood out.
