mac and cheese: roux verse modernist cuisine

pretty much biased the comparison using my favored gorganzolaroux recipe verse sodium citrate/cheddar/pepperjack/manchego.

the sodium citrate made a much smoothe sauce but there was more depth with the roux. it could be that i didnt like the pepperjack in the mac though

Looks good from here. Nice side by side comparison.

i use this with a little more roux and milk and 3 times as much cheddar, cabots seriously sharp. go really light with the fresh grated nutmeg. use real elbows, i dont know where i got those twisty things

they lived into their 90's
