Sous Vide refrigerate, then sear tomorrow?

One of the short people in my house missed dinner tonight.  I have had the steaks in the Sous Vide at 130deg for 4hrs.

Can I chill in an ice bath, then refrigerate till tomorrow, reheat in Sous Vide, then sear?

Did some googlz and looks like rapid chill in ice bath, reheat in sous vide, or just hard sear and enjoy with colder center tomorrow.

They probably hit 130 the first hour depending on thickness.  130 is safe.  Your 4 hr clock has plenty of time.  The ice bath is a good idea

Worked like a charm.  Slightly tougher than the ones last night, but great flavor.

I would have, except the short person missing was also the one who picked them up because they wanted steak last week.  Would have felt bad eating his too, because he did a great job picking them out.
