Ribs just ta use new tools

In Ohio we had a small break in the weather.  Fired up the egg with intentions of going back to basics..  Ribs on a rib rack.  Two seasonings only.  Then on the egg grate to finish.  No wrap no juices.  No brown sugars. 200 deg at 3.5 hours on rib rack. Then I ran out of coals so on the grate till done with whatever was left.

St Louis cut just to use new knives. Dayum sharp too. To the touch doesn't feel sharp at all.  But thru the raw and cooked meat.  Hot butta.

Knives being a bit thicker wasn't as bad as I thought.  Well balanced.  Happy

BBQ hack spatula is just perfect for ribs.  Hands down.

Over all.  Tickled.  Laughing at why I waited sooooo long to get good knives.  Thank you DBcooper making me see that.
