Strip loin roast

Bought a prime New York strip loin from Costco.  About 14lbs. 

Trimmed off the fat cap and a little more.  (Trimmed a lot of fat)

Indirect at 250 for a little over 2 hours until 120-125.

seared it off, and the. Was in a cooler for over 3 hours.  Still hot when took it out. 

Very easy cook and everyone impressed!

No leftovers!
