Careful where you put that thing!

Cooked a rib roast in the Egg today and had two probes in it. One from the Smobot that was controlling the Egg, and one from a Smoke, stuck in from the other end, just for the hell of it.
The Smobot probe was reading almost ten degrees higher than the Smoke, which sorta concerned me. I stuck in my Thermapen, the ultimate standard, as a tiebreaker, and it agreed with the Smoke, so I went with that.
Afterward, I calibrated the two probes with boiling water, and they agreed perfectly. So even though I thought I had placed both probe tips in the exact center, obviously I hadn't.
Just a cautionary tale, FWIW.

Probe placement is critical. If you get it in a fat pocket it will read different than in meat too. I use the probe for rough temp, use thermapen for final temp.
Don't tell your problems to people. 80% of people don't care and 20% are glad you have them.
