Brisket Question

Good Day. I have a LBGE. I have a 7 lb. Choice Brisket Flat. How long of cook is this? 250 deg.? Thanks

Great night- give the search function here a go, read all that you find and then make a decision. There are many ways to get there and many ways to finesse the cook. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Hi neighbor! I have always been too intimidated by a flat. If I had a flat, I think I would do more of a braise. I think 250 would be a great temp to start. Smoke it a bit and then into a "Travis Style" braise.

I ended up doing a 7 lb. Flat from Costco on Christmas Day. Used the rig with oval stone on bottom, made a foil pan for the middle .
Salt and Black pepper with Chile flakes for the rub. White oak and sugar maple chunks. Sprayed with dark black coffee every hour.
Wrapped in butcher paper at 170, about 5 hrs.
Done at 7-1/2 hrs. . In cooler with towels for an hour. Good Vittels.Pure MichiganGrand Rapids, Michigan LBGE, SBGE -

Maybe some of it was less. It could of had just a little more juice. Good for a flat for me. I’ll try again. It went from 195 to “ doggone it” pretty fast. I’ll have to babysit the finish better.Pure MichiganGrand Rapids, Michigan LBGE, SBGE
