Brisket - Got a Smoke Ring, Not That it Matters!

Recieved some Central Market gift cards from my students, so splurged on a couple of their brisket cuts.  They don't differentiate between point and flat, but there was some point in these two.  Used a @The Cen-Tex Smoker inspired rub from this post:  https://eggheadforum.com/discussion/1195148/first-time-doing-a-brisket-and-first-time-using-a-flame-boss-200-help-please-have-a-large-green-egg/p1 Haven't done a 'flat' cook since my first failure over 10 years ago.  These two turned out great!

    Yes those briskets got a ring.  Lot great.
    BTW- a trick I use when prepping a brisket is to cut a small piece off the end of the flat perpendicular to the grain run.  That way I know the cut direction after creation of the meteorite.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    That old thread was like a walk down memory lane lol. Even the original "let's go Brandon" even showed up with his "brisket is overrated" bit. Gold. Forgot about that guy.

    You're guaranteed a smoke ring if you put a little bit of nitrites in your rub.  Prague powder #1 or instacure.  If you want to be politically correct, use some celery powder (contains natural nitrites).   IMO, the end result is what matters and people eat with their eyes. 

    A natural smoke ring in a kamado is hit or miss.   Great work!

    I did a flat this last summer and it was pretty easy to tell you the truth.  While in the stall I wrapped it and poured a cup of coffee on it, came out great!  I will not shy away from flats any more.

    I have heard of people doing that with coffee or beef broth (and now beef tallow) . The truth is, I haven’t  seen a flat in a store down here in years so I’ll likely never know. If I’m cooking for a smaller crowd, I would do beef ribs over a flat (assuming I could even find one these days). I’m sure there are ways to do them that are reliable but by the time I got adequate at cooking brisket, flats were not even available to buy for the most part. That problem kind of solved itself for me. .

    I cut my teeth on flats and have hit many more singles than doubles, triples or the elusive home-tun.  However here is a link that gets good reviews regarding flat cooks:  BTW- coffee is included in the recipe.  FWIW-
