Test Turkey

So I wanted to do a test turkey before Thanksgiving. Invited some friends over and made this:

350 for about 2 hours. I cheated and used the egg genius. I put a bag of ice on the breast before it went on for an hour. I also let it sit in the fridge uncovered over night. I pulled it at 165 IT in the breast dark meat was closer to 175+

OH One other thing. I used a generous amount of apple wood chips, But I like a lot of smoke flavor. I used some generic chicken rub.

It tasted great. Friends loved it, and took home the little leftovers their were. THAT SAID nothing beats a brisket.

12LBS before the spatchcocking.... I felt like there was plenty of room so I ordered a 15 for actual thanks giving.
